Well, maybe that&#8217;s just my opinion but it certainly ranks pretty highly in the\u00a0<em>RUSSH\u00a0<\/em>team&#8217;s books too. In theory Christmas would be a good time to reignite this passion, but I\u2019ll be home with 10+ family members, and I don\u2019t need that kind of stress in my life. For Christmas day I\u2019ve been assigned dessert, specifically Tiramisu (my in-laws are Italian, and we\u2019re doing pasta instead of Turkey). It\u2019s a speciality of mine, and I always use <\/span><a href=\"https:\/\/www.instagram.com\/p\/B-gLo7Mnjgk\/?hl=en\"><span style=\"font-weight: 400;\">this recipe from Sydney chef Mitch Orr<\/span><\/a><span style=\"font-weight: 400;\">. I love his approach to food and this always turns out perfectly. It\u2019s not too sweet or rich \u2014 I prefer my Tiramisu boozy and strong on the coffee flavour. But one tip I\u2019ll share is to top it with milo instead of cocoa powder. Delicious.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I\u2019m also crazy for a good chip (I\u2019m a <\/span><a href=\"https:\/\/www.bouldercanyon.com\/\"><span style=\"font-weight: 400;\">Boulder Canyon<\/span><\/a><span style=\"font-weight: 400;\"> girl) and some taramosalata (<\/span><a href=\"https:\/\/freshfodder.com.au\/dips\/taramosalata\/\"><span style=\"font-weight: 400;\">Fresh Fodder<\/span><\/a><span style=\"font-weight: 400;\"> obviously, but when I\u2019m home in Port Stephens the local bakery <\/span><a href=\"https:\/\/www.instagram.com\/twobobsbakery\/?hl=en\"><span style=\"font-weight: 400;\">Two Bobs<\/span><\/a><span style=\"font-weight: 400;\"> make their own and it\u2019s 100\/10). Not a recipe exactly but it\u2019s my afternoon snack of choice. I\u2019m also a sucker for anything lemon curd-related and think I\u2019ll be whipping up some mini lemon curd tarts for a festive picnic soon. I like <\/span><a href=\"https:\/\/www.somethingsiliketocook.com.au\/recipes\/lemonlavendercurdtart\"><span style=\"font-weight: 400;\">Clementine Day\u2019s recipe<\/span><\/a><span style=\"font-weight: 400;\"> and usually adapt it for my purposes. I\u2019m tossing up between Chef Ella Murphy\u2019s Butterflied Chicken with Mulberry Gastrique or her Garlic &amp; Herb Roast Chicken. Why not both? My forever go to inside and out of the holiday season is a beloved staple from my dear friend Sam. His \u2018Salted Caramel Crack\u2019 recipe is a real showstopper. Here\u2019s how to make it:<\/span><\/p>\n<p><b>Sam\u2019s Salted Caramel Crack<\/b><\/p>\n<p><b>Base<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Half a pack of Salada crackers<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">250g salted butter<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 cup brown sugar<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tsp vanilla extract<\/span><\/li>\n<\/ul>\n<p><b>Topping<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 block dark chocolate<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Pistachio kernels, roughly chopped<\/span><\/li>\n<\/ul>\n<p><b>Method<\/b><\/p>\n<p><b><\/b><span style=\"font-weight: 400;\">Line a baking tray with greaseproof paper and break the Salada crackers into quarters, spreading them evenly across the tray.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a saucepan over medium heat, melt the butter and brown sugar together. Cook for around 5 minutes, stirring occasionally, until the caramel becomes thick, glossy and bubbling. Stir through the vanilla, then quickly pour the caramel over the Saladas, covering them as evenly as possible.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bake at 180\u00b0C for 15 minutes, or until the caramel turns a deep golden colour \u2014 keep a close eye on it, as it can darken quickly. Remove from the oven and let it sit for a couple of minutes, then scatter the chocolate over the hot toffee. You need 125ml good quality sherry vinegar, 2 shallots diced very small and a pinch of salt. And served with plenty of <a href=\"https:\/\/www.danmurphys.com.au\/product\/DM_6038689?store=1026\" target=\"_blank\" rel=\"noopener\">champagne<\/a>.<\/p>\n<p>And I looove Christmas ham. This <a href=\"https:\/\/www.enotw.com.au\/feed-me\/sticky-sweet-spiced-glazed-ham\" target=\"_blank\" rel=\"noopener\">Spiced Glazed Ham<\/a> recipe, from <em>Every Night of the Week<\/em> by Lucy Tweed is delicious, and sometimes I like to make it kitsch by adding pineapple rings and maraschino cherries on top too. So, my first port of call is the most perfect martini, truthfully I wing it but the <a href=\"https:\/\/www.greygoose.com\/en-au\/cocktails\/grey-goose-vodka\/dirty-martini-cocktail.html?srsltid=AfmBOopjVrPqws4Dy_iJd5irnbVrIspIdmZRTUgFs7SJKUTBzd12oj-k\" target=\"_blank\" rel=\"noopener\">Grey Goose<\/a> guide is good for those seeking a little more precision.<\/p>\n<p>Speaking of Nigella, her <a href=\"https:\/\/www.nigella.com\/recipes\/crab-mac-n-cheese\" target=\"_blank\" rel=\"noopener\">crab pasta recipe <\/a>is possibly the reason my partner is still with me \u2014 it sits halfway between a bisque and a macaroni cheese, and it verges on orgasmic. When I\u2019m getting festive, I always volunteer to do the roast potatoes with creme fraiche and caviar and they must be done in duck fat, even though I did smoke out the kitchen a little last year. I adore <a href=\"https:\/\/www.instagram.com\/sian_redgrave\/?hl=en\" target=\"_blank\" rel=\"noopener\">Sian Redgrave<\/a> (as human and chef) so will be trying her <a href=\"https:\/\/assemblylabel.com\/blogs\/journal\/sian-redgrave\" target=\"_blank\" rel=\"noopener\">honey-roasted sprout, peach and herb salad<\/a> to sit alongside my true 70\u2019s passion: a prawn cocktail, best served in a Waterford Crystal coupe.
